You could pretty much sum up the restaurant scene in America in one sentence: Hamburgers are dead; and beef itself is losing some appeal. The kind of restaurant that is making a name for itself these days is the one that gets a cult following rather than marketing to a general broad appeal. Consider this as an open letter to the food service managers of America. For pity’s sake, do something different!

We might as well face it: only the young care about general appeal any more. A ten year old kid is the most conservative diner you could imagine. Take them to any restaurant offering a menu of wonders and delights, and they’ll head straight for the hot dog. No chili, no cheese, just ketchup, thank you. Pizza parlors are about as exciting as their culinary explorations get, but they’d better offer plain pepperoni or there’s going to be trouble.

But the grown-ups think in terms mostly of ethnic categories. And speaking of ethnicity, Mexican, Italian, and Chinese are fine… but isn’t it time that we acknowledged that there’s more than three countries that make food? Treat yourself to a Mediterranean restaurant some time and you’ll get a feel for what you’ve been missing. Falafel, hummus, baba ganoush, fresh wet green tea leaves, sweetening with honey instead of sugar, and ways to cook lamb you’ve never thought of. Pita bread baked fresh on the premises, so it shows up at your table in a puffed-up balloon and slowly deflates to the flat pancake shape.

America, the melting pot of international culture, and yet unless you’re in one of the five biggest cities you’re out of luck finding international foods outside of pizzas, and tacos. the bowl of chop suey if you’re lucky. South American cuisine that is farther south than Mexico is unheard of. An Argentinian or Brazilian restaurant perhaps? And when’s the last time you found a Russian deli outside of New York? America has made two gains in Russian cuisine - Pirozhki and Baklava, and Baklava is more Baltic than Russian. I bet if you’re a typical American, you’ve never seen Shashlyk. It’s a Russian-style shish-kebab usually made with marinated lamb and some favorably sweet grilled onions. How hard is that to make? To take another example, France gets praised for it’s wonderful cultural food, but by reputation only. Let’s see a few more French restaurants and perhaps we’ll get a chance to see what all the fuss is about.

America has a hard time dealing with it’s own native cultural diversity, it seems. You get cheese curds in Minnesota, Iowa, Wisconsin, and in the rest of the States cheese is yellow and in the form of flat slices. Cajun cuisine got rave reviews on all of the cooking shows on Food network, but the craze seems to have come and gone without more than a few Cajun-themed restaurants popping up. Nobody east of Utah seems to have heard of a Denver omelet, nobody west of New England seems able to understand how to cook a lobster. I guess Indian cuisine within driving distance is a faint hope when you can’t even get all of America into one food court.

And as if the lack of international diversity and interstate diversity weren’t enough, it seems that even the methods of preparing food are stuck in a rut. Why must all chicken be breaded and deep-fat fried? Travel the planet if you have to, but find a place serving broasted chicken and grab a plate of that. There, now, wasn’t it nice to have chicken that isn’t drowning in grease for a change?

Consider the other food varieties largely missing from the American plate. Did you know pasta can be made from something besides wheat, bread can actually be something besides bleached and white, pickles aren’t always sliced and sour, and they’ve invented varieties of pepper which can be served whole besides the Jalepeno? That kielbasa sausage tastes just as good on a bun as a hot dog? That sweeteners can be based on something besides corn? That you can put condiments on a sandwich that aren’t yellow and red? That tortillas can be made from something besides bleached wheat flour? Listen, if only I never have to look at another “French fry” as long as I live, it will be too soon; enough with the damn deep-fried potatoes already!

American cuisine draws a heavy dose of criticism abroad, and for good reason. We simply do not offer substantial variety. The usually noble American ethic of being practical and down-to-Earth takes on an edge when you ask for something besides fried cow. What, are you some kind of elitist? Fried potatoes not good enough for you, you want fried mushrooms or zucchini instead, eh? Yeah, you must be an Imperialist to be making demands like that! No, actually, we’re not Imperialist, we just saw that food pyramid that the USDA put out and thought that it might make a good idea to support it.

Of course, the food industry feels a huge economic impact. Cost measures are everywhere; it’s difficult to get Americans to try something new, tough to find a supplier that offers a diverse stock who is also economical, and especially hard to hire trained staff that knows how to make dishes not usually found in the average homogenized restaurant. But with a small amount of effort, this can all be overcome. And the reward potential is outstanding. The restaurant business being competitive as it is, the one best way to draw a customer base is to offer something unique that you can’t get anywhere else.

Because you don’t want to be just another grill. You want to be that fantastic place that people drive miles out of the way to get to and tell all their friends about. You want to be the kind of place that serves the food people get an irresistible craving for. Irresistible cravings, after all, aren’t just a matter of taste - nutritionists have indicated that they’re your bodies way of telling you that you need certain nutrients that only the craved-for food can provide. But most of all, you want to be recognized as the food service manager with an edge, somebody who thinks out of the box and makes their business crazy successful by being better than all the others.

Bartending with Style

As opposed to the other food service careers, bartending is one job where personal style counts the most. The best bartenders I’ve known always have a personality to them, and some even have a little edge of attitude. Always remember that the whole point of your job is recreation.

The best bartenders are good conversationalists. Have a joke or two ready. Read up on the news daily before your shift, so you’ll be able to keep up chat on sports, politics, and business.

Working in America, don’t stress so much over knowing really complex drinks. About half of your orders will be for domestic beer, anyway. The non-beer orders will be something simple like a shot or a simple mixed drink like a vodka-and-coke. If somebody orders something really complicated, do your best to get it as close as you can and serve it. Bar etiquette nearly demands that the customer accepts whatever you pour as your version of what they ordered, and anybody who is enough of a troublemaker to ask for a Long-Island Iced Tea when you’re slammed busy with a full bar generally deserves whatever you put in their glass, and probably wouldn’t know the difference anyway.

Some environments to avoid:
A bartender can get work nearly anywhere in the world that allows alcohol, so you might as well be picky about where to work. You can work where you want, it’s your career and a matter of personal taste, but if I were you I’d avoid working in these places if I could help it:

Night clubs, rave clubs, or anyplace that requires a bouncer and caters to a young crowd. Loud music, rowdy customers, frequent fights, dumb kids trying to fake their ID on you. Additionally, young adults aren’t civilized enough yet to know how to behave in a bar, can’t hold their liquor, and don’t tip worth anything.

Big commercial chain “McBars”. I don’t want to name names, but any place that advertises on TV is about as far from a real bar as you can get and still serve liquor. Especially if it’s solid ferns and oak inside and caters to the yuppie crowd. These places tend to draw featherweight drinkers and have no personality to them, plus you’ll have an uptight management hierarchy over your head every minute.

Gambling bars or sports bars. Generally, any place with slot machines built into the table or giant screen TVs that are always on and turned all the way up just aren’t worth much. There’s too much distraction from the serious business of drinking and developing a warm relationship with the bartender which will result in a thoughtful tip. Anyplace where the focus is to encourage the customer to never make eye contact with you is deadening to work at, since you might as well be a robot for all anybody cares. The exception is if the bar is actually in a casino or hotel or has an actual live band. At least there people are likely to stay a while.

How to do all the tricks:
Get yourself a mixology pocket guide and keep it on you to avoid having to memorize every bizarre drink. But never let the customer see you checking it - keep it in a drawer or cupboard, or act like you had to go in the back room for a second.

Glassware:
Many drinks are specific to the kind of glass; at the very least get the glass right. Keep one towel for drying and another for polishing. A stemmed glass should be used for cocktails with no ice, so that the drink will not be warmed by the hand holding the glass.

How to chill a glass:
Either put the glass in a refrigerator or fill it with cracked, shaved or crushed ice before mixing. When the drink is ready, empty the ice out of the glass.

How to frost a glass:
For frosted drinks a glass should be stored in the freezer or buried in shaved ice. To ’sugar frost’ a glass, wet the rim of a previously chilled glass with a slice of lemon or lime and then dip the rim into powdered sugar.

Ice:
You’ll use lots of ice; cubed, cracked, crushed or shaved. Always put the ice in the mixer before pouring the drink; this way the liquids are chilled as they flow over the ice and there is no splashing. For stirring or shaking use cracked or cubed ice, and for specialty drinks crushed or shaved ice.

Sugar:
As with ice, put the sugar in the mixing glass before the liquor. Usually powdered sugar is used because it dissolves quickly in alcohol at low temperatures.

How to stir:
Drinks containing liquor and ingredients require stirring with ice for proper mixing. When using carbonated drinks make sure to stir gently to preserve their fizz. Too little stirring fails to mix the drink, while too much melts the ice and ruins the drink. Also, to stir a drink containing ice cubes, poke the ice a few times; this will evenly mix any and all liquors.

How to shake:
Often drinks containing fruit juices, sugar, cream or other ingredients are difficult to mix — these should be given a quick shake. When a drink requires frothiness use a blender.

Using a strainer:
Always use a metal strainer - the kind which clips to the edges of the mixing glass.

Pouring:
When mixing the same cocktail for a group of people, make all the drinks in one batch in a pitcher. So that no one drink is stronger or weaker than the rest set up the glasses in a row and fill each glass only halfway, then go back and finish each one off.

How to float liquor:
To make one liquor float on top of another in the same glass pour each ingredient slowly over a teaspoon held bottom side up in the glass. The teaspoon will spread the liquor evenly over the one below without mixing the two. Be sure to pour the ingredients in the right order, always adding liquids in order of descending density.

Flaming Liquor:
The trick to flaming liquor - rum, gin, brandy, or whiskey - is to make sure that the glass and the liquor have both been warmed. Fill a teaspoon or tablespoon with liquor of choice, heat over a flame and then set it afire. Pour the flaming liquid into the remaining liquor to light the drink.

The Changing Face of the Pharmaceutical Industry

Fill prescriptions and hand out pills? If only it were that simple! Those who pursue a pharmacy profession perhaps might have cause to wonder just how so much politics got mixed with their job?

Plan B, the “morning after” pill
It hovers conveniently between being a contraceptive and an abortion aid. It is one or the other, certainly, but how? And do you have moral grounds to refuse to fill a prescription for it? How about the legal grounds? That’s what pharmacists are asking all over the country.

Plan B is nothing more than a high dose of the synthetic hormone progestin the same ingredient in traditional birth control pills. Sold in the US, it can be used to prevent pregnancy for up to five days after sex though it is most effective when taken within 24 hours of intercourse. Plan B, its manufacturer says, reduces the odds of pregnancy by eighty-nine percent. Put another way, out of a hundred women having unprotected sex, typically eight will get pregnant; using Plan B, only one will.

But researchers can’t rule out the possibility that Plan B may also prevent implantation of eggs in the uterus, unlike a contraceptive which simply prevent the egg from being fertilized. They’re not sure because under natural conditions some fertilized eggs fail to implant anyway. So in studies on Plan B, there is virtually no way to tell whether the failure to implant is natural, or caused by the progestin in Plan B and is hence an “abortion pill”.

To further muddy the waters, many anti-abortion groups have been branching out to oppose contraception, too. Some see a direct connection between the practice of contraception and the practice of abortion. Religious bodies such as the Catholic church have traditionally been against contraception anyway. This leaves pharmacists caught in the middle, with a few of them choosing sides. Some have actually refused to supply the pill, citing religious reasons. This is one debate that promises to drag out for a long time before pharmacists are sure exactly what they should do.

Illegal here and legal there
The influx of Canadian pharmaceuticals in recent years has shown that not every American agrees with how their representative democracy regulates drugs. A kind of patchwork class struggle has ensued, with some opposing certain kinds of drugs on everything from financial to political to religious grounds and others being the elderly, infirm, or just plain liberal getting what they need however they can.

Though it is still illegal to import pharmaceuticals from Canada or other countries outside the States, the government now says that it is backing off strict enforcements that have irritated elderly consumers buying cheaper Canadian drugs. However, the Bush administration still claims that importing Canadian drugs is dangerous because the medicines could be inferior or counterfeit. The U.S. Customs and Border Protection agency has said that the shift in policy does not mean that Canadian drugs are safe, but that the agency has simply decided to refocus its resources.

Called into question is the purity of motives. America still has no citizen-wide health plan to speak of, and citizens must rely on insurance. Meanwhile Canadians enjoy their health care free (well, taxed), and Americans are quick to cross a border to take advantage of a freer drug economy. One must question that if money weren’t involved, would this even be an issue? The FDA’s objections are based on the notion that Canadian drugs may be unsafe to take. Yet they seem to be good enough for Canadians to take…

ADHD
Ritalin and other stimulants are increasingly shown to be doing more harm than good, while the diagnosis of Attention-Deficit-Hyperactivity-Disorder is rapidly being shown to be quackery. That would have been heresy five years ago, when it was nothing but a rant for the occasional lone nut. But now child psychologists, neurologists, and pediatric physicians are starting to speak out on it. And they are making these strong accusations.

There’s the recently commenced FDA hearings, which pertain to reports of death, strokes and heart attacks in children and adults treated for ADHD Most recently the number one ADHD drug has been reported to cause strokes, some were sudden deaths and others were heart complications. Furthermore, the various drugs used to treat ADHD are always amphetamines, which are potentially as addicting as cocaine. And we prescribe it for half of the population, since the symptom list to ADHD reads pretty much like anybody could have it on a boring day.

It is certain that somebody, somewhere in the system wants ADHD and amphetamine prescriptions to stay around, leaving families, parents, and doctors to wonder whether they are seeing a real disease being treated, or a corporate machine grinding them into it’s bottom line.

The marketing of drugs
Every country in the world bans the practice of direct-to-consumer drug advertising… except the United States. Here, consumers are subjected to a never-ending barrage of televised drug ads showing for an increasing array of patented chemicals to treat a mystifyingly trivial array of “diseases” and “disorders”. TV commercials get more and more vague as to what, exactly, their product treats. Essentially, it amounts to taking pills for nothing. They actually have an acronym all their own: SMD, “Spontaneous Mass Diagnosis”, where a new disorder is “discovered”, then a bunch of patients are created who are potential customers for the pill the company which “discovered” the disorder.

A serious backlash against this direct marketing and it’s effect on the industry has yet to find a voice. Mostly passive controversy exists. Americans, as it turns out, are more liberal about drugs than we once thought, as even those who strongly oppose the commercial drug racket tend to shrug and say “But if somebody wants to take it, let them!”

Will it get more controversial?
Much of these issues being raised are the result of advances in the way we practice medicine. But they are only a start. There are more advances in medical science being made today, and they will almost certainly lead to more political “hot-button” issues landing in the pharmaceutical industry’s collective lap.

I did not have to change my number and the hookup was ready and waiting for me when I arrived at my new home.

Very few of us like to wait while others of us absolutely hate it. Spider-Man 3 (2007) - Who is Venom

Peter Parker has finally found the balance he’s longed for between his love for Mary Jane Watson and his responsibilities as Spider-Man.

The city of New York and it’s citizens are at last coming around and appreciating everything he has done as his crime-fighting alter ego, and Peter is in the running for a staff job at the Daily Bugle.

However, everything Peter has worked for is about to unravel. Flint Marko, while fleeing prison, is caught in an accident that displaces molecules and is transformed into the Sandman, a new super villain who is able to change his body into any shape of sand he sees fit.

Little does Peter know the black substance has its sights set on Eddie else as well. Turning Brock into Venom, a foe that mirrors everything Spider-Man can do. Forcing Peter to become the strong-willed hero he has forgotten about if he hopes to defeat his greatest threat yet.

Peter Parker has finally managed to piece together the once-broken parts of his life, maintaining a balance between his relationship with Mary-Jane and his responsibility as Spider-Man. But more challenges arise for our young hero.
